Parmesan and Parsley-crusted salmon

What you’ll need:


Serves 4

  • 4 Fillets salmon
  • Butter
  • 50g fresh white breadcrumbs
  • 2 tbsp chopped parsley
  • ½ Lime, juiced
  • Olive oil
  • 40g Parmesan

How to cook

  1. Heat the oven to 200°C/fan 180°C/gas 6. Season and put the salmon fillets on a lightly buttered non-stick baking tray.
  2. Whizz the breadcrumbs, parsley, lime juice, 1 tbsp oil and Parmesan in a food processor. Cover the salmon with the breadcrumb mixture and bake in the oven for 10-12 minutes until the salmon is cooked through and the breadcrumbs are golden. Serve with salad or new potatoes.

Smoked salmon pate

What you’ll need:


Serves 8 to 10

  • 400g (14oz) Cream cheese
  • 300g (10oz) Smoked salmon
  • 2tbsp Horseradish sauce
  • ½ Lemon, juiced
  • Freshly ground black pepper
  • 1 Small bunch chives, chopped
  • 15 Medium or thick slices bread, toasted

How to cook:

  1. Whizz up all the ingredients, except the chives and bread, in a processor until smooth. Season and chill until needed.
  2. For Melba toast, split the toast through the middle then grill the un-toasted side. Serve with the pâté sprinkled with chives.
